    What Is Quick Bread?

    A quick bread is a bread that uses any leavening other than yeast or eggs to create rise. Since the bread doesn’t need yeast, it is much simpler to make. It doesn’t need time or climate control, allowing for it to be “quick” and cooked immediately.

    Some quick breads are batter breads, while others create a typical dough. This buttermilk quick bread recipe is a mixture of both. Plus, it uses a little bit of yeast to add a more traditional bread flavor.

    Can I Make This Buttermilk Quick Bread Without Buttermilk?

    Yes, you can absolutely make this buttermilk quick bread recipe without buttermilk. The purpose of the buttermilk is to provide the butterfat to moisten the bread, as well as some additional flavor. If you want to make this quick bread recipe without the buttermilk, you can substitute full fat whole milk instead. This will still provide the structure and moisture without the tang.

    Why Does This Buttermilk Quick Bread Have Yeast?

    Despite being a quick bread, this buttermilk quick bread recipe still utilizes yeast. If you’re wondering why, the answer is simply flavor. Many quick bread recipes are sweet, like cinnamon sugar, so you don’t want the flavor of the yeast. Since this buttermilk quick bread is savory, the yeast provides the expected “fresh baked bread” flavor.

    Even though there is yeast in this buttermilk quick bread, it still holds true to being a quick bread. It doesn’t need to climate control or time for the bread to rise. Simply mix the dough, pour it in the prepared pan, and bake the bread. The yeast will provide a small amount of inflation, but the buttermilk quick bread doesn’t rely on it.

    Savory Buttermilk Quick Bread Recipe

    If you don’t want to purchase fresh herbs for this buttermilk quick bread recipe, you can substitute them with dried. (use ⅓ the amount of each.)  Additionally, you can use one tablespoon of Italian seasoning in place of the basil, thyme, and oregano.

    The fresh dill really does elevate the flavor of this buttermilk quick bread. So if I can encourage you to purchase any of the herbs fresh, this is the one.

    Cheddar and Herbs Buttermilk Quick Bread

    The savory buttermilk quick bread recipe whips up quickly and is a wonderful complement to most meals.  Serve it with soup, use it for a sandwich, or add it to a picnic.

    Ingredients

    • 2 ⅓ cups all purpose flour
    • 2 Tablespoons sugar
    • 2 teaspoons baking powder
    • ½ teaspoon baking soda
    • 1 teaspoon salt
    • 1 Tablespoon instant yeast
    • 1.5 cups sharp cheddar cheese
    • 1 Tablespoon minced fresh basil
    • 1 Tablespoon fresh thyme
    • 1 Tablespoon minced fresh oregano
    • 1.5 Tablespoon minced fresh dill
    • 1.5 cups buttermilk
    • 4 Tablespoon butter, plus more for the pan

    Instructions

    • Preheat oven to 350 degrees. Prepare a one pound loaf pan by rubbing it with butter until it is completely greased.
    • In a large bowl, combine flour, sugar, baking powder, baking soda, salt, yeast, shredded cheddar and fresh herbs. 
    • Melt the butter and stir it into the buttermilk. Pour the liquid ingredients into the bowl of dry ingredients and fold together until a shaggy, wet dough is formed.  
    • Scrape the dough into the prepared pan and bake for 50-60 minutes. It is done when a toothpick inserted in the middle comes out clean. Let the loaf cool for 10 minutes before turning out onto a wire rack. Let it cool another 10 minutes before slicing.
