Do you find that during the grilling months, you tend to get into a habit of the same old barbecue sauces? I know I do. There’s something about the simplicity of buying one at the store that is oftentimes difficult to resist.

This chipotle bbq sauce is the perfect answer to that predicament. It freezes beautifully so you can make one batch and have enough to last the grilling season!

How To Make Roasted Strawberries

Roasted strawberries are pretty straightforward. You take some strawberries and you roast them. This works really well for bringing out their natural sweetness so you don’t have to add brown sugar to the sauce. The thing is, you have two choices for how you do it.

If you roast them low and slow in the oven, you get a nice sweet caramelization on them. This works really well for bringing out their natural sweetness so you don’t have to add sugar and macerate them. All you have to do is roast them in a pan at 350°F for about 30 minutes.

Alternatively, you can use your broiler. I don’t recommend this unless you are super comfortable with the speed your broiler works. If you are, you can get a nice light char on your strawberries that makes for a rich and smoky flavor. To do this, set your broiler to medium and roast for about 10 minutes.

How Long Will Chipotle BBQ Sauce Last?

If you have leftovers of your chipotle bbq sauce, you can store that in your fridge for up to one week. Or you can store it in the freezer for up to 3 months. Just make sure if you’re freezing it that your container has a really good seal, and that you’ve left enough headspace to account for the sauce to expand. You don’t want it exploding out of your container.

Ingredients

  • 1 pound fresh strawberries, stems removed and halved
  • 2 large tomatoes, sliced thickly
  • 1 teaspoon oil
  • 2 Tablespoons tomato puree
  • 1 chipotle chile in adobo sauce, plus extra sauce for heat
  • 5 garlic cloves, smashed
  • 3 green onions, roots removed and roughly chopped
  • 1 lemon, zested and juiced
  • 1 thumb of fresh ginger, peeled and sliced
  • 2 Tablespoons honey
  • ⅓ cup loosely packed cilantro

Instructions

  • Preheat the oven to 350°F.
  • In an oven safe pan, add the strawberries and sliced tomatoes and bake for 30 minutes, or until the strawberries have let out their juice and begun to lightly caramelize.
  • While you’re roasting the strawberries, lightly sauté the onions and garlic in a small saucepan over medium heat until they are sweating. Stir in the chipotle peppers in adobo sauce and tomato puree and cook until a rusty color, about three minutes.
  • Add in the remaining ingredients, except the cilantro, and bring to a boil. Reduce the heat to a simmer, stirring occasionally until the sauce thickens enough to coat the back of a spoon and slowly drip off.
  • Place the cooked ingredients to a blender and blend until smooth and combined. Add in the cilantro and pulse until the cilantro is chopped small. Set aside.
