Chill two coupe glasses in the freezer. Use a peeler to cut a lemon swath from the peel and pierce it twice with a cocktail pick. Remove and replace the cocktail pick with a stem of fresh lavender. Refrigerate until ready to use.
Pour the vanilla vodka, lemon juice, and honey lavender syrup into the bottom of a cocktail shaker. Add the pinch of salt and fill with ice.
Shake vigorously for 15-20 seconds then strain into the chilled couple glasses. Serve with the lemon lavender garnish.
If you don't like honey simple syrup, you can use standard lavender simple syrup in its place.
