Preheat the oven to 350°F and line three baking sheets with silicone liners or parchment paper.
In the bowl of an electric mixer, beat together the butter, peanut butter, and both sugars until fluffy. About 3 minutes. Slowly beat in the egg and vanilla extract until completely combined.
In a large bowl, combine the oats, flour, baking soda, salt, mini chocolate chips, and pumpkin pie spice until combined. Stir it into the butter mixture until JUST combined.
Using a cookie scoop, scoop up eight cookies per baking sheet, each two inches apart. Press 5-6 chocolate candies into the top of each cookie dough heap.
Bake for 11-12 minutes or until the edges are set, but the center is still a little wet. It will look very fluffy. Let cool on the pan for 5 minutes then transfer to a wire rack to finish cooling.
