Lightly coat the pineapple slices and tomatoes with oil. Grill over high heat until the pineapple has developed lightly charred grilled marks and the tomatoes are charred. Remove and let cool and cut into a small dice.
In a large bowl, combine the grilled pineapple, charred tomatoes, and the rest of the ingredients. Season with salt, cover and refrigerate for 30 minutes before serving.
