This easy pineapple salsa recipe is amplified by the smoky char of the grill. Serve it with chips, on tacos, or with grilled chicken for a superb snack that is both sweet and spicy.
1Small pineapplepeel removed and cut into ¼" thick slices
8Roma tomatoes
2teaspoonsoil
6garlic clovessmashed and minced
3habenerosseeds removed and minced
1small red oniondiced small
1 ½TeaspoonsCumin
¼CupLoosely packed cilantrominced
2Limeszested and juiced
Instructions
Lightly coat the pineapple slices and tomatoes with oil. Grill over high heat until the pineapple has developed lightly charred grilled marks and the tomatoes are charred. Remove and let cool and cut into a small dice.
In a large bowl, combine the grilled pineapple, charred tomatoes, and the rest of the ingredients. Season with salt, cover and refrigerate for 30 minutes before serving.
