Instructions
Pre-Chill
Place champagne flutes in the freezer for up to 20 minutes to chill the glasses.
Strawberry and White Currant Bellini
In a blender, blend together the white currants, strawberries, and lemon juice until smooth. Press through a fine mesh sieve to remove any seeds or stems. Reserve the strained purée.
Pour the strained mixture into the pre-chilled champagne flutes until each flute is roughly half full. Pour the Prosecco on top, being careful not to overflow, and gently stir in the puréed mixture. Serve.
Notes
To make this recipe kid-friendly, try using sparkling water or sparkling white grape juice instead of the Prosecco.
