These Spare Ribs with Strawberry-Chipotle BBQ sauce are a great way to break out of your typical bbq rut. Impress your friends and your palate with this sweet & spicy twist.
1lbfresh strawberries, tops removed and cut in half
2large tomatoes, sliced thickly
1lemon, zested and juiced
1tablespoonginger, sliced
5clovesof garlic, smashed
3green onions, roots removed and roughly chopped
1tablespoondijon mustard
1tablespoonworchesterershire
2tablespoontomato purée
1chile in adobo, (plus a spoonful of the sauce for extra spice)
2tablespoonhoney
¼cuploosely packed cilantro
Instructions
Strawberry-Chipotle BBQ Sauce
Preheat the oven to 450°F
In an oven safe pan, add the strawberries and sliced tomatoes and place in the oven to bake for 15 Minutes or until the strawberries have let out their juice and begun to lightly caramelize.
Place all of your ingredients, except the cilantro, in a small sauce pot and bring them to a simmer. Simmer for 10 Minutes, remove from the heat and let them cool for 10 Minutes.
Place the cooked ingredients to a blender and blend until smooth and combined. Add in the cilantro and pulse until the cilantro is chopped small. Set aside.
Spare Ribs
Preheat your broiler to High.
Rub your ribs with the smoked paprika and brown sugar rub on both sides and place the ribs on a roasting rack lined sheet pan.
Place your ribs in the oven as close to the broiler as you can get and cook for 5 Minutes or until the brown sugar is bubbling and slightly caramelized
Change your heat to 300°F and move your sheet pan of ribs to the center of your oven. Cook for 1 Hour.
Remove your rack of ribs from the oven and cover them with aluminum foil. Continue to cook another 1 Hour.
Remove your ribs from the oven, slather them in a thick coating of the strawberry-chipotle bbq sauce, cover them with the foil again and roast for another 30 Minutes.
Remove the ribs from the oven a final time and brush on the bbq sauce again. Serve with warmed bbq sauce on the side for anyone who wants more.
Notes
You can flip the ribs and broil the underside if you want, but it will only take a couple minutes, not the whole five.The more you blend your strawberry-chipotle bbq sauce, the more it will turn orange. Blend it for as little time as possible to maintain the beautiful red color.
