This Sorrel & Duck-Fat Fried Purple Potato Breakfast pizza is the perfect way to start the morning.  It is easy to make ahead, and so delicious it make you actually excited to wake up on the weekend!

I think I’ve mentioned this before, but we make pizza every Friday night.  I think we could eat pizza every single day of the week though and not a single one of us would argue.  It can be such a versatile meal, and very easy to overstuff with delicious veggies (which is how we usually do it!).  This one keeps it fairly simple with the breakfast staples – potatoes, cheese, and eggs.  Plus, it has sorrel on it, which is a light, lemony herb with big leaves (and easy to forage!)

This is our kick-off recipe for our month of focusing on eggs, and this one is great because it is a simple and tasty way to get in some great protein first thing in the day.

Skills & Techniques

If you want to perfect any of your culinary skills to help you make this Sorrel & Duck-Fat Fried Purple Potato Breakfast Pizza like a master chef, I recommend reading up on these topics:

  • 9 Tips for a Perfect Pizza Crust.  Like how to keep it from sticking to the stone, or get crispy.
  • How To Roast Garlic .  Delicious roasted garlic is in our sauce for this pizza.
  • How To Buy & Store Eggs.   This helps you navigate the lingo of egg-buying.
  • All About Yeast .  It’s a key ingredient in getting an excellent crust!
  • How To Buy & Store Fresh Herbs.  Sorrel only stays good for about 2 days, make sure it doesn’t spoil before you make your pizza.
  • How To Pan-Fry .  For frying your potatoes in delicious, delicious, duck fat! Yum!
  • Understanding Flours.  To help you pick which type of flour to use for your crust.

Leftovers

Because of the eggs can run a risk of food-borne illness, I don’t recommend storing the leftovers of this pizza unless you cooked your eggs through completely.  If you did, great!  Store your pizza in an air-tight container in the refrigerator for 3-5 days.  If you would like to reheat this Sorrel & Duck-Fat Fried Purple Potato Breakfast Pizza, I recommend:

  • Preheat the oven to 400°F.
  • Place the pizza on a sheet pan with parchment paper, or onto a clean pizza stone.  Put in the oven and bake for 10 minutes or until pizza is heated through.
  • Carefully remove from the oven and serve hot.

You may find that the eggs get a bit dry and chewy reheated.  You can help prevent that by sprinkling some fresh cheese over the top of the eggs so the heat doesn’t directly get to them. 🙂

Sorrel & Duck-Fat Fried Purple Potato Breakfast Pizza

If you want to make this the night before you want to bake it, you absolutely can (well, mostly.  Save the eggs for the morning)!  Cover it tightly (but loosely, also) with plastic wrap and place it in the fridge.  Pull it out and let it sit on the counter 20 minutes before you want to bake it.  Your fried purple potatoes may get a bit soggy sitting on the pizza overnight, so I recommend keeping them in an airtight container on the counter instead.  Then, when you’re ready to bake, you can add them to the pizza and crack the eggs on top.

Ingredients

Duck-Fat Fried Purple Potatoes

  • 1/4 cup duck fat
  • 1 large purple potato, , peeled and sliced into 1/4" thick pieces
  • salt and pepper, , to taste

Sauce

  • 1 cup ricotta cheese
  • 1 head of garlic, , roasted
  • salt and pepper, , to taste

Pizza

  • 1 batch of pizza dough for a 12" pizza
  • 6 slices of provolone cheese
  • 1/2 cup extra sharp white cheddar cheese, , shredded
  • 1 bunch of sorrel
  • 2 green onions, , sliced
  • 1/4 cup extra sharp cheddar cheese
  • 7-9 large eggs, (or duck eggs if you desire)

Instructions

Duck-Fat Fried Purple Potatoes

  • In a heavy bottomed skillet, melt the duck fat over medium heat until the fat begins to look ripply.
  • Carefully place some of the purple potato slices into the oil, being cautious not to let them overlap. Let them cook about 2 Minutes, or until they have begun to brown and get crispy. Flip and cook another 2 Minutes, until they are crispy like potato chips.
  • Remove the purple potatoes from the oil, place them on a plate lined with paper towels and repeat until all the purple potato slices are fried. Set aside.

Sauce

  • In a bowl, smash the cloves of roasted garlic until they resemble a paste. Mix in the ricotta cheese and season with salt and pepper to taste.

Preheat

  • Preheat oven to 450°F

Sorrel & Duck-Fat Fried Purple Potato Breakfast Pizza

  • Spread out your pizza dough onto a sheet pan lined with a silicone mat or parchment paper. You can also use a pizza stone, like I did, but make sure to use cornmeal first.
  • Slather the dough with the sauce until it is all used up. Lay out the slices of provolone cheese and sprinkle with the shredded extra sharp white cheddar.
  • Place the sorrel leaves onto the cheese, blanketing the cheese completely.
  • Top the sorrel with the duck-fat fried purple potatoes, sliced green onions and shredded extra sharp cheddar cheese. Crack the eggs on top and bake for 20 Minutes or until the eggs are done to your preference.

Notes

To make this pizza ahead, store the fried purple potatoes in an airtight container on the counter. Assemble the pizza as normal - without the purple potatoes or eggs - and gently wrap it with plastic wrap and store in the fridge overnight. While your oven is preheating, add the purple potatoes and eggs to the pizza and bake. It may take a few more minutes baking time for the dough to get crispy.

  • #ad Doesn't this beautiful maple dijon salmon make you want to dive right in? That's because it was cooked to a perfectly moist and flaky temperature using the integrated sous vide function of the new Souspreme Multi Pot from @fisslerusa. They're the only brand I trust when it comes to pressure cookers, so I knew that this all-around cooking tool had to be part of my kitchen, and that sous vide function feeds my foodie soul (literally!). Head over to the blog to find out how to win one for yourself. That way you can start making this recipe ASAP. It will be your new favorite tool, trust me! (Pssstt...Christmas is right around the corner and it makes a great gift!) . #souspreme https://www.foodabovegold.com/maple-dijon-sous-vide-salmon/ #kitchengadgets #sousvide #sousvidecooking #salmondinner #seafoodie #fissler #freshfish #dinnerisserved #foodielife
  • #ad  I am particularly excited to share this recipe with you guys because it rolls up (haha, get it 🤓) everything about my culinary background. 🔪 This stuffed pork tenderloin has it all; my favorite sweet prunes from @caprunes , salty pancetta, creamy goat cheese, and crunchy hazelnuts.  It gets seared to golden-brown perfection on the stove top, then finished in the oven for a tender and moist entree that is literally bursting with flavor.  All of this gets rounded out with a simple white wine pan sauce to complete the dish. 🍁 If you haven't cooked with prunes before, this recipe is a great introduction.  They pair well with both sweet and savory dishes and bring a depth of flavor to this recipe that makes it phenomenal. 🍽️ The recipe is up now on the blog and I am so excited for you to try it. https://www.foodabovegold.com/stuffed-pork-tenderloin-with-california-prunes/
  • I know that chestnuts are one of those foods that you feel like you have to wait for the holiday season to eat. However, the department stores have decided the holidays are here, so I have too. Plus, if they're already in stores, why wait to eat them? If you've been nervous to try making your own roasted chestnuts, it's actually very easy. The hardest part is removing the shells, and I give you all the best tips and tricks to make it as easy as possible. Get my recipe for oven roasted chestnuts on the blog now and feel autumn fully descend on your home. https://www.foodabovegold.com/how-to-roast-chestnuts/
  • Raise your hand if you've started eating fall foods yet? 🙋 Once the clouds and the rain came in, I was all ready to indulge in the cozy and comforting tastes of autumn. 🍁 That's part of why I love the delicious fall flavors from @WholeFoods. They give me a simple way to indulge in those flavors for every meal.  They seriously have you covered from breakfast to dinner, with snacks, drinks and treats in there too! I'm especially a fan of the pumpkin cardamom sauce.  The cardamom gives it a unique flavor unlike other pumpkin sauces out there.  It doesn't need to be loaded with cheese and shines as it is. Plus, the zucchette pasta is adorable, it looks like little pumpkins. Make sure to pop into your local #WholeFoodsMarket for these limited-time offerings.  They're in stock now and ready to be eaten while curled up in a blanket and a good book. (Or at least that's how I eat them...). Can't make it to a store? Check out the link in my bio, if you are an Amazon Prime member you can have it delivered right to your door (available in select zip codes)! Talk about a time saver!  Look in my stories for a sneak peek into everything in the box. 🎁 Which fall flavor you are most excited about? Pumpkin spice? Caramel apple? Maple? Pear? Tell me in the comments so I can eat it all! 🍐🤤 #Sponsored #WFMFallFlavors #MakesMeWhole
  • #ad Only a few minutes into the game and the Seahawks have already scored! Woohoo! Football season is back and I am so happy because that means the return of tailgating foods. I don't know about you, but when I think of tailgating I usually only think about savory foods. But the desserts are my favorite part. That's why I like to pack along FatBoy super thick ice cream sandwiches and use fun seasonal sprinkles to showcase my favorite team. (Blue and green today!). You can use all kinds of sprinkles to make it fun and even host a "best decorated" contest between your friends. (Winner gets a whole box of @fatboyicecream to themselves?) . It's a such fun way to celebrate tailgating and football season! What teams are you rooting for today? How would you show off your best decorated ice cream sandwich? I want to know! #fatboyicecream #freezepops #fatboycones #fatboytailgating #fatboyfootball
