Because of the eggs can run a risk of food-borne illness, I don’t recommend storing the leftovers of this pizza unless you cooked your eggs through completely. If you did, great! - Preheat the oven to 400°F.
- Place the pizza on a sheet pan with parchment paper, or onto a clean pizza stone. Put in the oven and bake for 10 minutes or until pizza is heated through.

If you want to make this the night before you want to bake it, you absolutely can (well, mostly. Save the eggs for the morning)! Cover it tightly (but loosely, also) with plastic wrap and place it in the fridge. Pull it out and let it sit on the counter 20 minutes before you want to bake it. Your fried purple potatoes may get a bit soggy sitting on the pizza overnight, so I recommend keeping them in an airtight container on the counter instead. Then, when you’re ready to bake, you can add them to the pizza and crack the eggs on top.

Sorrel & Duck-Fat Fried Purple Potato Breakfast Pizza
Ingredients
Duck-Fat Fried Purple Potatoes
- 1/4 cup duck fat
- 1 large purple potato, , peeled and sliced into 1/4" thick pieces
- salt and pepper, , to taste
Sauce
- 1 cup ricotta cheese
- 1 head of garlic, , roasted
- salt and pepper, , to taste
Pizza
- 1 batch of pizza dough for a 12" pizza
- 6 slices of provolone cheese
- 1/2 cup extra sharp white cheddar cheese, , shredded
- 1 bunch of sorrel
- 2 green onions, , sliced
- 1/4 cup extra sharp cheddar cheese
- 7-9 large eggs, (or duck eggs if you desire)
Instructions
Duck-Fat Fried Purple Potatoes
- In a heavy bottomed skillet, melt the duck fat over medium heat until the fat begins to look ripply.
- Carefully place some of the purple potato slices into the oil, being cautious not to let them overlap. Let them cook about 2 Minutes, or until they have begun to brown and get crispy. Flip and cook another 2 Minutes, until they are crispy like potato chips.
- Remove the purple potatoes from the oil, place them on a plate lined with paper towels and repeat until all the purple potato slices are fried. Set aside.
Sauce
- In a bowl, smash the cloves of roasted garlic until they resemble a paste. Mix in the ricotta cheese and season with salt and pepper to taste.
Preheat
- Preheat oven to 450°F

- Spread out your pizza dough onto a sheet pan lined with a silicone mat or parchment paper. You can also use a pizza stone, like I did, but make sure to use cornmeal first.
- Slather the dough with the sauce until it is all used up. Lay out the slices of provolone cheese and sprinkle with the shredded extra sharp white cheddar.
- Place the sorrel leaves onto the cheese, blanketing the cheese completely.
- Top the sorrel with the duck-fat fried purple potatoes, sliced green onions and shredded extra sharp cheddar cheese. Crack the eggs on top and bake for 20 Minutes or until the eggs are done to your preference.
